Hi it's my first time installing Gentoo and I'm getting some confusion at the kernel configuration step. When I run lspci, my SATA controller is Intel Corporation 8 Series/C220 Series Chipset Family 6-port SATA Controller 1 [AHCI mode] (rev 95). I don't know which SCSI low-level drivers to enable.

You'll need the libata SATA_AHCI driver. There are other alternative drivers that can work if BIOS is set differently, but if you're using native mode, AHCI should work.
