I followed the handbook and got to the first reboot. However, the system booted into xubuntu, and not gentoo. I'm not sure how to address this. I need to be able to boot into both as I'm using xubuntu at the office until I get gentoo fully up and running.

Here is what I have:
Toshiba Satellite P75-A7100 Laptop
24GB memory
Intel Core i7-4700MQ
/dev/sda 512 GB ssd (gentoo being installed here)
/dev/sdb 256 GB ssd (encrypted xubnutu lives here)

Not sure why the install of grub did not boot gentoo.

Also, what do I need to setup so xubuntu and gentoo are both boot options?

sda (gentoo):
livecd ~ # fdisk -l /dev/sda

Disk /dev/sda: 477 GiB, 512110190592 bytes, 1000215216 sectors
Units: sectors of 1 * 512 = 512 bytes
Sector size (logical/physical): 512 bytes / 4096 bytes
I/O size (minimum/optimal): 4096 bytes / 4096 bytes
Disklabel type: gpt
Disk identifier: 287CF380-0DE3-4665-85D0-3A57C6809F9D

Device Start End Size Type
/dev/sda1 2048 6143 2M BIOS boot partition
/dev/sda2 6144 268287 128M EFI System
/dev/sda3 268288 100931583 48G Linux filesystem
/dev/sda4 100931584 1000215182 428.8G Linux filesystem

sdb (encrypted xubuntu):
livecd ~ # fdisk -l /dev/sdb

Disk /dev/sdb: 238.5 GiB, 256060514304 bytes, 500118192 sectors
Units: sectors of 1 * 512 = 512 bytes
Sector size (logical/physical): 512 bytes / 512 bytes

Device Start End Size Type
/dev/sdb1 2048 1050623 512M EFI System
/dev/sdb2 1050624 1550335 244M Linux filesystem
