So, I mistakenly forgot to point to my hard drives manually while in the installation phase of grub2 and now need to access grub.cfg and/or /boot/grub/device.map so I might point to the correct disk location (since grub doesnt exactly like to play nice with the smart array controller). Is there any way to edit this from either the grub command line, or the live cd itself?

Sure. Boot up the LiveCD and then follow just the steps from the Handbook for mounting the drives (no need to mount proc, sys, or dev or follow through with the chroot) . Then edit /mnt/gentoo/boot/grub/whatever to your heart's content. Be sure to unmount them before you reboot.
