I do want to install Gentoo on a USB stick and boot from it. On Arch I can do this by modifying the mkinitcpio.conf file, but Gentoo does not have such a file; so how is this to be done on Gentoo? Many thanks, and a happy new year.

Just do a normal installation by following the handbook. Instead to /dev/sda install to /dev/sdb or whatever your USB stick will be when you run fdisk -l from then Gentoo installation CD. I use a 64GB stick, mbr partitions, Ext4 and partition labels:
USB_BOOT: 500MB
USB_SWAP: 8GB
USB_ROOT: 30GB
USB_HOME: The reminder.

My DE is Xfce.
