GRUB has over written my older Arch Linux installation.

I did

grub-mkconfig -o /etc/grub/grub.cfg

I had installed os-prober

but it did not detect my Arch Linux installation for some reason on a separate partition.

Now my Gentoo installation is not set up properly either as when I try to boot into my newly compiled kernel, it flashes the Caps Lock light and is unable to boot.(I'm guessing this is kernel panic)

So I have two questions. How do I correct the Gentoo installation.. should I use genkernel ?

And how do I recover my Arch Linux installation?

Without more details, no one can guess what is wrong with your Gentoo kernel.

Your arch install should be exactly where you left it assuming it wasn't overwritten by you during the install process. All you need to do is (re)install a boot loader pointed to the arch kernel. Any live CD should do. Chroot back into arch and reinstall the boot loader.

Once you have done that leave it alone. Like Highlander there can only be one... bootloader, that is.
