Do I have to go through 7.2.0 prior to 7.3.0?

Off the top of my head, I would not think so.

Note, 7.2.0 and 7.3.0 are slotted. In general, slotted packages are designed to be able to co-exist.
Personally, if I "upgrade" compiler version, I prefer not to go back down, only up.
Since I don't experiment with compilers much, I generally just live with stable gcc.

Others may have better advice.

6.4.0 to 7.3.0 is what I did. The usual cautions about libtool, glibc and @system apply.

In fact, I did an emerge -e world --keep-going as the last step, although that was not needed. IIRC three packages failed and needed special env.d handling, mostly because the switch in default C/C++ standard.
