after quite some tears and pains, I managed to create and test a Dockerfile to build a minimal gentoo box.
I use it mainly for development or as a starting clean stage for a docker container where I can then emerge other packages.

What's in it?
- Minimal pre-configuration included in the Dockerfile
- Possible to specify build time arguments like -nomultilib, -hardened, -j MAKEOPTS
- System re-compiled using -march=native optimizations
- Final image size for the -nomultilib image is <900 MiB, without portage
