well i always loved to have the latest kernels and after a while i got tired of having to remerge nvidia-kernel and always hated that it deletes the old modules, so i modified installkernel script to do a little trick, touch the old kernel's nvidia module so it wouldnt get removed and rerun emerge nvidia-kernel.

just appened this to the bottom of your /sbin/installkernel (part of debianutils).
Code:
echo -en "\nShould i re-emerge nvidia-kernel?(y/n) "
read input
if [ "$input" = "y" ] ; then
        /bin/touch /lib/modules/`uname -r`/video/nvidia.o
        /usr/bin/emerge nvidia-kernel
fi

i'm not good with bash scripting but this works for me and i hope its helpful for others :)
peace
