So far I've set up FSF GCC 3.3 on it and have distcc using that to compile with, but it still doesnt work, complaining
cc1: error: invalid option 'arch=pentium4'
and it does that on every CFLAG except -0s

It would be my guess that the gcc on the G5 doesnt have the x86 toolchain installed. Don't know how to do this.

So I tried to put gentoo on it. The 2004.0 CD won't boot. I downloaded it twice and neither would boot. I grabbed one of the older experimental liveCD's, which did boot, but with numerous errors, and from then i didnt even know what to do, since the NIC wasn't detected (Airport extreme).

Can anyone help me out here with either approach?

don't know anything about the status of gentoo and the G5.
To use distcc on your G5 compiling to x86 architecture, you need to have a crosscompiler. There are some great howto's on the general proces.

Check out this gentoo forum thread. Or google for cross complie how to's.

Good luck.
