I decided to give gentoo a try and I get the same problem!
I saw your post hoping someone had an answer, so I will have to be patient I guess.

The screen hangs and has a look like what can only be described as pepermint candy.

I am sure the developers here are working on it. I hear Gentoo is really good and gets better. :oops:

It's a kernel bug, rivafb is broken. You could try to pass this option when you boot the livecd:

video=ofonly

See https://forums.gentoo.org/viewtopic.php?t=139966&highlight=.

However, it's most likely that your system will hang anyway. This is another bug probabely related to kernel 2.6.3-benh*. See https://bugs.gentoo.org/show_bug.cgi?id=43459.

Sooo, this is the bad news. Now the good news: Get the Gentoo 1.4 livecd and install everything. You can still add a 2.6 kernel afterwards (ppc-development-sources-2.6.* should work, DON'T use 2.6.3-benh*).
