I (and pretty much everybody I know) am not very fond of the long delays that GTK has by default for opening a submenu after you select a menuitem. So I seached for a way to disable them. To my surprise, the only place where this is actually documented is in the GTK+ reference manual for programmers. But the solution is actually rather simple:

Create (or edit) the file .gtkrc-2.0 in your home directory and put the following line in it:

gtk-menu-popup-delay = 0

That's it. You can change the number to any desired value (in milliseconds).

For the interested, there is a similar property for the delay of menus on the menubar: gtk-menu-bar-popup-delay, but this one appears to be zero by default.

GTK rather cleverly detects it when you move the mouse towards the submenu and when this happens it won't close the submenu and open the next one you pass over. This allows you to "cut the corner" even when the delay is set to zero. The time for this closing delay can also be tweaked by setting the gtk-menu-popdown-delay property in the .gtkrc-2.0 file.

This should allow everyone to choose the menu behavior they are most comfortable with.
