I have a very good gentoo-linux-pcc system and I want to upgrade only stable packages, so I've deleted ~pcc from accepted keywords on my /etc/make.conf file.
When I do an

I get this:

how can I see what package need jackarta-regexp and other packages? I haven't it on my world, and I want to control if I really need the package that require them, or I can delete it and its dependences.
Is it possible to control all broken dependences, and which package has dep problems?

Add the -t option to emerge. It will show the dependency tree and hopefully that will tell us what packages need what.
