Which should I use as both have different results on the same drive?

You need to use mac-fdisk if the disk will also have MacOS, share space with MacOS, or if you want to boot from OpenFirmware with quik. Basically, if you have an oldworld machine, you'll almost certainly need to use mac-fdisk. If you have a newworld machine and never plan to use MacOS, I think it's safe to use fdisk.
