"Checking ROOT filesystem.... fsck.ext3: No such file or directory while trying to open /dev/ROOT"
then it goes on to tell me how the superblock could not be read or does not describe a correct ext2 filesystem...

You need to load up the LiveCD again and chroot back in and re-alter your fstab,
/dev/ROOT should be changed to /dev/<hard drive partition> (e.g. /dev/hda3).

You might want to check your /etc/init.d/net configuration for any faults.

zaf,

Check your /etc/fstab, it is wrong for now.
change /dev/ROOT to the device which contains your root filesystem
example:
Code:
/dev/sda3               /               ext3            noatime                 0 0
