What are the advantages of emerging source code packages instead of binary packages?

+Source code gets compiled with my custom USE flags (thereby creating executables which are customized to run on my processor).
-Comipling source code often leads to debugging compiler errors, and takes much longer than simply installing binary packages.


Unless I'm missing something, it seems to me that binary packages are the way to go for everyone except the most committed control freaks.
