The two main desktops would be GNOME and KDE, there is a war going on as far which one is better. You should give both of them a try and see which one you like.

Personally I use GNOME because it is GTK based, even though GTK is slower compared to QT, all major applications that I use such as Gimp, Gaim, Firefox, etc.. are all GTK based.

That's a very generic question. So here's the lowdown. You'll probably want Xorg as all the other graphical servers are a little... premature... then you'll want a DE(Desktop Environment)/DS/Desktop Shell/WM(Window Manager) to put on top of Xorg.
In the DE catagory, there's KDE, GNOME, and XFCE. Personally, I like KDE... and for noobs this is probably the easiest choice. Note I said easiest, not best.
In the DS catagory, the only one I know of is Enlightenment E17 which is still in development but is my desktop of choice. There is a wiki article [urlhttp://gentoo-wiki.com/Howto_e17]here[/url] to guide you through an install.
Finally, in the WM catagory, there's Window Maker, Enlightenment E16(My personal fav WM), Fluxbox(My 2nd Fav WM), OpenBox, a bunch of other *boxes IceWM, FVWM............ And about a million others. If you choose one of these, then I recommend fluxbox or E16. OpenBox has been getting a lot of popularity lately, but I don't really like it since I couldn't get it to work well in a non-Xinerama dual-head configuration.
Also, if you choose a WM then you'll probably want to grab something to render your desktop. The best one of these I found was Rox. Technically it's called the ROXFiler. but it can render desktops and panels.

If you're new to linux. Most people will tell you to start out with KDE or Gnome as they are the most Windows-like interfaces. But I say just grab a WM or E17 and have at it.

Oh, and for a login manager. Most people use Entrance, KDM, or GDM. I recommend Qingy. It basically works around the security vulerabilities of using an X login manager(I.E. running Xorg as root)
