Is there a way I can get an exhaustive list of what's installed?
I would like to recompile everything ...

If you have epm installed, you can do
Code:
epm -qa


If you just want to recompile everything (e.g. after changing USE-flags) you can do:
Code:
emerge --deep --emptytree world


Note that this will only recompile the packages that are in your world favorites, and their dependencies, but that should cover everything, if you have a proper configuration.
