I just got through installing everything and started to boot using grub but got an:

*Checking root filesystem ...

The superblock could not be read or does not describe a correct ext2 filesystem. If the device is valid and it really contains an ext2 filesystem (and not swap or ufs or something else), then the superblock is corrupt, and you might try running e2fsck with an alternate superblock
e2fsck -b 8193 <device>

I tried using e2fsck -b 8193 <device> but got...

fsck.ext3: No such file or directory while trting to open /dev/ROOT /dev/ROOT:

I had the same problem, but I can't fix it. I keeps giving me a "readonly filesystem" error message. Anything I can do to change this?

This can happen if your /etc/fstab has typos or invalid filesystem options. If in doubt, post your /etc/fstab .
