Code:

make menuconfig

Code:

  │ │    Kernel options  --->                                              │ │

Code:

  │ │[*] High memory support                                               │ │

With more appearing all the time.
If you are going to play with Gentoo, you'd better get used to wandering around the config to find things - after a while you get an idea of where things are likely to be.

You can also press "/" to search menuconfig for an option that's hiding. :)
