I am installing gentoo on my ibook, and I noticed that I have about half a dozen partitions that seem to be apple drivers, so that my / and swap end up being partitions 8 and 7 respectively. Is this normal?

If you want to boot OS9, yes it is. If not, you can safely remove these partitions.

how do I remove them? mac-fdisk claims it can't.

Two options:

1. You can initialize the drive with mac-fdisk if you don't mind erasing all of your existing partitions
2. parted can remove the partitions

He has to be careful not to remove the first two partitions of type Apple_partition_map and Apple_Bootstrap, yes?

I reformatted with disk utility from the OS X cd and that got me down to 2 mystery partitions.

Well, the first option will completely wipe the drive, so not a problem. If you are removing the partitions with parted, then really, the partition map is the most important, a bootstrap partition can be easily restored.
