I'd like to try out the new Java 1.7 SCTP protocol, but I'm having trouble finding an ebuild for sun-jdk-1.7. The standard portage tree has sun-jdk-1.5 and 1.6, and the java-overlay has sun-jdk-1.4. I'm pretty sure I don't want icedtea, which seems to require gcj and isn't really JDK7 anyhow. I think the ideal thing would be the sources from http://hg.openjdk.java.net/jdk7/jdk7. Does anybody have an ebuild for that?

There are first ebuilds in the java-experimental overlay.

How can I get the java-experimental overlay? It's not listed under layman -L, and when I try to follow the directions at http://www.gentoo.ro/proj/en/java/experimental.xml, I get the error "svn: Could not open the requested SVN filesystem". Following the link from the experimental page also gives the same error.

Code:
svn co https://overlays.gentoo.org/svn/proj/java/java-experimental/

gentoo.ro is not gentoo.org:
Java page: http://www.gentoo.org/proj/en/java/

Wow, first hit on google for "gentoo java-experimental" goes to a broken page that isn't even run by Gentoo. That's pretty sad. Thanks for the correct link :)

Moved from Portage & Programming to Unsupported Software as overlay ebuilds are not officially supported.

Right, now that Java SE 1.7.0_1 is out, what's so wrong with sun-jdk-1.7 that it doesn't show up in the official package tree? Why isn't there any Java 7 ebuild in the Portage tree (not even masked)? There are some icedtea-7.* ebuilds in the java-overlay, but that's it.
What did I miss (assuming I did)? This guide is out of date...

What you missed is that it takes action by a limited, unpaid resource (a Gentoo Developer) to get an ebuild into the tree. It'll come, but there's nothing automatic about the schedule.

There won't be any sun-jdk-1.7, Oracles binary releases of jdk-1.7 were added as oracle-jdk-bin:1.7 shortly after their release, final icedtea:7 is now available in the java-overlay.

Yes, the guide needs to be updated before java 1.7 goes stable.

Is there any way to install icedtea 7 without CUPS?

Um, it is in tree. oracle-jdk-bin is the package you're after.

Currently there is not as far as I'm aware. Guess would require a bigger patch to the build system to make that happen. Though you can change the dependency to a pure build dependency and remove cups afterwards. Of course this will break printing for any java app.

The icedtea-bin packages don't force the dependency on cups either.

This is an example of an utterly pointless answer. My question was solely technical. Apparently you're the only one to have missed that.
