This may be a stupid question, but if the install iso doesn't have mkfs.btrfs support whats the easiest way to setup up during the install?

Other then using a disc that isn't soo decrepit it has no means of btrfs formatting you can always just use ext3/4 and then once you have the installation complete (booting and working in general) install btrfs-progs and do a live conversion from ext3/4 to btrfs. Take a look at Btrfs Conversion from Ext3 or Ext4 - I did do that myself quite some time ago and it all went fine.

Don't forget to change kernel and fstab accordingly afterwards

So does the kernel in the gentoo minimal iso have btrfs support, if so I could simply just format from a different distro, create my subvolumes and the boot the gentoo cd...right??

Just use SysRescueCD for install.

I have no idea if it does or not, but yeah to the rest.

+1
However, do note that if you format btrfs from something else first you will probably need the "alternate" kernel option because the default wont be able to mount due to missing features or some other shit (had this happen last week) 'cause its kernel 3.4 or something. Also note that the btrfs-progs are a little old I think and don't come with some recent changes which you can only get on a fresh format.
