I apologize if this seems like a "duh" question but is symlink required in my uses if I am using eselect to pick my kernel?

eselect automaticaly set symlink to kernel you select to /usr/src/linux

From a more general stanpoint, if symlink was required, it would not be associated to a use flag (an option) or, at the very least, this use flag would default to on.
BTW, the symbolic link is, by itself, rarely needed.
As I get a dozen of kernels on my system, and am pretty lazy, the symlink is rarely in accordance with the kernel I actually loaded.
Its only compulsory to get it right when building non-in-kernel drivers (mainly graphic blobs, some sound drivers, specific SCSI devices...) what you generally do immediately after building a kernel and secondarily important when emerging a package which ebuild sets a value for the CONFIG_CHECK variable such as dbus, udev, glib, libv4l...
